Thai Noodles and Chicken Satay

No more boring ramen noodles. I wish I would have known about using peanut butter in cooking when I was a missionary back in the 1970s. This is an easy dish.

Peanut Sauce:
1/3c water
1/3c peanut butter
1T lime or lemon juice
1t garlic/ginger paste
1t sugar
1/4t Sriracha sauce
mix well

Meat marinade:
2T soy sauce
2T lemon or lime juice
1T ginger/garlic paste

3 boneless chicken breasts sliced thin (about 12-15 slices)
12-15 skewers

Soak meat in meat marinade. Thread meat on the skewers and cook on a hot grill.

Take 4 packets of Ramen, and add the seasoning to boiling water, and add the noodles.
Once tender, drain the noodles and divide in to 4 bowls.

Divide the peanut sauce over the noodles
Place satay (meat) on the bowls.

Garnish with thinly sliced fresh veggies: sweet onion, sweet peppers, radishes, cucumbers
