Pepper, Celery and Onion Aspic

This is a tasty salad that is refreshing, and easy to make.

1/2 cup finely chopped bell pepper
1/2 cup finely chopped sweet onion
1/2 cup finely chopped celery
1/2 t. basil
dash of garlic powder, or a crushed clove

mix the above in a bowl and set aside

Boil 2 cups of chicken broth (salted) or 2 cups of prepared chicken bullion
Add to a large package of lime Jell-O
stir until dissolved
Add 2 cups cold water
Add the dry ingredients and herbs and stir well
Place in a 10×10 square pan
Refrigerate until set

Before serving, mix the following:
1 part sour cream
2 parts mayonnaise
squeeze of 1/4 of a lemon
1/2 teaspoon of finely ground basil
stir well and let sit while flavors meld

Serve a slice of the aspic with a dollop of the above sauce
