Peach Dressing

The amount’s are not exact here, but I made a dressing that Elizabethe just raved about.  So, here it is..

1 cup juice from canned peaches halves
1/2 c rice vinegar
1/2 c salad oil
1/2 c golden raisins
puree 4 peach halves
chop 2 peach halves
1/2 c Feta Cheese
1/4 c chopped pecans
bowl of salad greens

In a small sauce pan, simmer the peach juice and let it reduce to about 50%.  Add raisins and let cool.  Add vinegar, puree, chopped peaches, and mix in a shaker.

Pour over a salad of leafy salad greens.  Top with cheese and chopped pecans and serve.
