Cucumber Jam and Variations

We are getting lots of cucumbers in our garden, and we already have lots of pickles.  So, I thought, cucumbers have a flavor that goes well with other flavors.  Why not make a jam/marmalade?


2 cups cucumbers (peeled, seeds removed, and shredded)
zest of 4 limes
juice of 4 limes
4 cups granulated sugar
1/3 cup powdered pectin (1 box)
option 1 – handful of finely chopped fresh basil leaves
option 2 – handful of finely chopped mint leaves
option 3 – two jalapeno peppers finally chopped

add all the ingredients in a sauce pan, and stir will bring to a boil.  Boil for 20 minutes, being careful not to let it boil over.

add to sterilized jars, and put lids on them.  Place in water-bath and boil for 8 minutes.  Remove jars and let them seal.
