Brent’s Peach-Carrot-Habanero Hot Sauce

Brent’s Peach-Carrot-Habanero Hot Sauce

1 pound of carrots
4 habanero peppers, seeds removed (Add more if you like it hotter.  4 produces a fair amount of heat without killing your taste buds.)
1 large can of canned peaches
1/2 c white vinegar
juice of 1 lime
1/4 cup brown sugar
1 1/2 Tablespoons salt
1 teaspoon citric acid
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Throw it all into a blender and blend until smooth.  Transfer in to a sauce pan, and over low heat, bring to a simmer.  Remove from heat and can in 4oz or 8oz canning jars.  Process jars to seal.  Makes about 5 1/2 pint jars.
