Bacon, Cheddar, Horseradish Omelet

The Bacon, Cheddar, Horseradish Omelet is going to become my favorite.  I have so much horseradish I need to find ways to use it.  Thinking about that bacon-horseradish dip in the dairy section of the store, I thought, why not?

This is real easy…

3 strips of bacon
2 eggs
2 slices of sharp cheddar
1 tsp horseradish sauce

Fry up the bacon until crispy.  Set aside on a paper towel to cool and the grease to drip off.

Beat the two eggs (add a little water if you like them fluffier), and pour in to a hot oiled omelet pan.  Add the cheese and horseradish.  When about melted, crumble the bacon on the cheese.  Fold the omelet on to the plate.

EAT!
